Ingredients

  • 1/3 cup canned chickpeas drained and rinsed
  • 1/4 cup zucchini finely diced
  • 1/4 cup Roma tomatoes seeded and finely diced
  • 1/4 cup grated beets
  • 2 tbsp parsley chopped
  • 1 vegetable boullion cube
  • 1 1/2 cups boiled water
  • Juice of 1 lemon wedge
  • 3/4 tsp za'atar
  • Salt and pepper to taste
  • 2 tbsp pumpkin seeds

Instructions

  • Boil water. Add all ingredients to a mason jar. Add boiling water and enjoy!
