Steamed Asparagus with Dairy-Free Creamy Lemon Herb Sauce

So to keep things very simple, I just used a store bought mayonnaise (no, not Miracle Whip), dressed it up with a little fresh herbs, lemon and honey and drizzled it over freshly steamed asparagus.

Ingredients

Sauce:

  • 1/2 cup Mayonnaise
  • Juice and zest of 1 lemon
  • 3 tsp chives finely minced
  • 1 tsp honey
  • Salt and Pepper to taste

Asparagus:

  • 3 lb asparagus trimmed
  • Pinch each of salt and sugar
  • 1 tbsp Olive Oil
  • Pinch each of Fleur de sel and pepper

Instructions

Sauce:

  • Mix together the mayo, juice, zest, chives, honey and season with a pinch each of salt and pepper. Set aside.

Asparagus:

  • Lay the asparagus in a large skillet with deep sides and cover with an inch of water with a pinch each of salt and sugar. Bring the water to a boil over medium heat and simmer until the asparagus turn bright green, about 5-8 minutes depending on the size of the asparagus. I always test the asparagus by biting into the cut end of the thickest stalk- but be careful because those babies are HOT! Transfer the asparagus straight to a serving plate.
