To a small bowl, mix together the poppyseeds, sesame seeds, garlic, onion and salt. Set aside.
To a medium skillet, heat a tablespoon of olive oil over medium low heat. Add the onion and cook slowly until it reaches a dark amber colour. Transfer to a food processor and allow to cool.
Once at room temperature, add in the cream cheese and yogurt and puree until smooth. Season with salt and pepper, to taste
Meanwhile, preheat oven to 400 F.
Heat a grill pan with another tablespoon of oil over medium high heat. Add the chicken breasts and cook until golden brown on both sides.
Transfer the chicken breasts to a baking sheet and top with a generous sprinkle of the everything bagel mixture, reserving about 1/2 of it for garnish or another meal. Bake until the breasts reach an internal temperature of 165 F.
Serve the chicken breasts with the cream cheese onion yogurt for dipping and garnish the plate with a sprinkle of the everything bagel seasoning.
Notes
Make sure you coat the chicken breasts GENEROUSLY with the homemade everything bagel spice mixture, and then finish them in the oven until they're cooked through. We sear it first so we don't risk burning the seasoning in the oven.
To get your cream cheese mixture to blend easily, you can soften the cream cheese before adding it to the food processor by leaving it out on your counter.
Chicken is done once it's reached an internal temperature of 165F. To check this easily, use an instant read thermometer.
To save time, you can also make your everything bagel spice ahead of time as it'll keep in your pantry for months.
