Healthy Pumpkin & Apple Crisp

Holidays are all about the comforting desserts and every family has at least one go-to treat for their annual holiday spread. For me, there are really two. Apple crisp and pumpkin pie.

Ingredients

Apple Filling

  • 2 apples peeled and diced
  • 1 cup pumpkin puree
  • 3 tbsp dried cranberries
  • 1 tbsp crystalized ginger finely minced
  • 2 tsp whole grain flour
  • 1 1/2 tbsp maple syrup
  • 2 tsp melted butter
  • 1/4 tsp cinnamon
  • pinch salt Generous pinch

Crisp Topping

Instructions

Apple Filling

  • Preheat oven to 375 F.
  • In a bowl, mix together all of the apple filling ingredients until well combined.

Crisp Topping

  • In a smaller bowl, mix together all of the crisp topping ingredients until combined.

Assembly

  • Divide the apple mixture between four 1-cup ramekins and top with the crisp topping. Transfer to the ramekins onto a baking sheet and bake for 25-30 minutes until the apples are tender and the crisp topping is crunchy and golden brown.
  • Enjoy warm out of the oven, or at room temperature.
