In a pot, combine water, oats, salt and cinnamon. Bring to a simmer.
In a bowl, beat the egg whites until frothed.
Combine whipped eggs with oats. Cook for 3 mins or until creamy.
Stir in vanilla and banana until well combined.
Let oats sit off the heat for 3 minutes.
Add desired toppings.
