Mom’s Lighter Carrot Cake Loaf

Instead of topping it off with high calorie cream cheese frosting, I create a Mom- themed stencil with an exacto knife and dust icing sugar on top.

Ingredients

  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 2 eggs beaten
  • 1 tsp vanilla
  • 1 1/2 cups finely grated carrots
  • 1 1/2 cups whole grain flour
  • 1 1/2 tsp cinnamon
  • 1/4 tsp grated nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup golden raisins
  • 1/4 cup powdered sugar

Instructions

  • Preheat oven to 350°.
  • Mix together the melted butter and brown sugar until combined. Add in the eggs, vanilla, and carrots and mix until smooth.
  • In another bowl, mix together the flour, cinnamon, nutmeg, baking soda, powder, and salt. Mix in three batches into the wet ingredients until combined. Stir in the raisins.
  • Pour into two 4 1/2 inch greased mini disposable loaf pans. Bake at 350° for about 30-35 minutes. Cool on a wire rack.
  • Print out the words MOM on a piece of paper, then trace the letters out using an exacto knife. Place the stencil on top of the loaf, then lightly dust with icing sugar. Pack in a plastic bag and tie with a pretty ribbon
