These Vegan Orange Poppyseed Waffles are the perfect Healthy Mother’s Day Brunch recipe that are packed with fibre and natural sweetness!
It’s almost mother’s day and I’m excited to get spoiled! Just kidding, honestly, I’ve been spoiled already just with my sweet new little family- motherhood is the best gift of all. Okay, so now that I’ve said all the stereotypical mom things that you read in Hallmark cards, let’s get to another really important issue- BRUNCH. These Vegan Orange Poppyseed Waffles are insanely delicious any time of year but you can bet your boots they will make an irresistible brunch option for Mother’s Day.
How to Make Vegan Orange Poppyseed Waffles
These vegan orange poppyseed waffles are surprisingly easy to pull off. Like most of my vegan waffle and pancake recipes, I use a flax egg in place of your standard egg. It takes just 15-20 minutes in the fridge to set up, and you’ve got a sticky high fibre base for your waffles. Next, I use a high fibre whole wheat flour, but in a pinch you can totally use all purpose or even a gluten free blend.
For my liquid, I use freshly squeezed orange juice which adds natural sweetness to your waffles so you don’t actually have to add much sugar. I also add some orange zest and a touch of maple syrup to round everything out. And you obviously wouldn’t be getting the full effect without poppyseeds. I love the combination of orange and poppyseed (think about those yummy muffins you’ve surely grown up enjoying!), so I had to incorporate that iconic flavour combo in these vegan orange poppyseed waffles. You can top these bad boys however you like, but to stay on theme, I bust out all of the beautiful citrus and call it a day.
These vegan orange poppyseed waffles are SO SO SO delicious and refreshing, and a perfect option for Mother’s Day.
Don’t have a waffle iron? No biggie. You can totally use this batter to make fluffy pancakes. I recommend just adding a few extra tablespoons of orange juice just to thin out the batter a touch, but if you like them super thick, then keep it as is.

Vegan Orange Poppyseed Waffles
- Combine the flax and almond milk in a bowl and refrigerate for 20 minutes.
- Preheat your waffle iron and spritz with non-stick cooking spray.
- In a bowl, mix together the whole wheat flour, baking powder, baking soda, salt, cinnamon, poppy seeds, Orange Juice, orange zest, flax egg and maple.
- Add about ½ cup of the batter to the waffle iron and close. Cook according to your waffle irons directions until golden brown.
- Top your waffles with orange segments, yogurt, pistachios, poppyseeds, orange zest and maple syrup.
