Moms and dads, if you’re not already following me on Instagram, get to it now, because I have been serving up my daily adventures feeding my son. I have been overwhelmed with requests from all of you to share the recipes I’ve been posting about so I’m making an extra effort to try to do this at least once every week. This week, I have been trying to figure out some ways to sneak extra green things into my sons meals, and while he isn’t quite advanced enough to eat lettuce leaves, I can definitely puree them into these Baby Spinach and Avocado Green Pancakes which are the perfect finger foods for kids.
How to Make Spinach and Avocado Green Pancakes for babies
These green pancakes for babies are great because they’re actually made in a blender in one easy step! I simply puree together some very ripe banana, avocado for fats, frozen spinach, oat flour, flax, and eggs until super smooth and then pan-fry them until golden brown on each side. Honestly, considering these have no added sugar or salt in them, and are chock full of healthy fats, iron and antioxidants, they are absolutely delish. No joke, I basically had to fight my son for the last of these baby spinach and avocado green pancakes.
Why Are These Green Pancakes Great for Baby Led Weaning?
If you’ve read my introduction piece on BLW, you’ll know that you want soft foods (like pancakes), that are easy for baby to pick up (um.. like pancakes). If your little one is just starting out with eating, then definitely you can cut these baby spinach and avocado green pancakes into strips to make it easier for them to pick up and get into their mouth. Either way, they’re super easy finger foods for kids, toddlers, babies, and adults, alike that you can feel good serving any time of day.

Baby Spinach and Avocado Green Pancakes
Ingredients
- 1 cup oat flour gluten free if needed
- 4 eggs
- 1/2 avocado
- ¾ cup ripe mashed banana
- ½ cup frozen spinach
- 1 tbsp ground flax seed
- Butter coconut oil or olive oil, for cooking
Instructions
- Add all of the ingredients to a blender and puree until smooth.
- Heat the butter, oil or coconut oil in a large nonstick skillet over medium heat. Cook the pancakes on either side- about ¼ cup at a time – until golden brown.
- Serve to your baby lukewarm.

Thanks for the recipe! Just wondering if the inside stays a bit mushy? I cooked them for a few minutes on each side and tried to flatten them but they still had that uncooked look in the middle. I am thinking that is probably just because the avo and banana but wanted to make sure. Thanks!

If using fresh spinach instead should you cook it and wilt it first before putting into the blender?
