I love a good cocktail. They can really make or break a holiday party, and it’s probably the first thing I look for when I arrive at a holiday soiree (okay so maybe after the host). With winter basically here (NOT HAPPY ABOUT IT) one of the things I look forward to after a long day is cuddling up on the couch with big mug of my vegan coconut rum cocktail.
I mean what better way to warm up than with a boozy drink? Whether you need the strength to shovel that driveway or your hosting a holiday party, my vegan cozy coconut rum cocktail is perfect for any occasion.
HOW TO MAKE VEGAN COCONUT RUM COCKTAIL
This vegan cocktail starts by warming up some almond coconut milk for a lower calorie base, and stirring it with cocoa powder and a little cinnamon. Once it’s steamy and well combined, I give it a good hit with spiced rum off the heat. Hey, you don’t wanna lose any of that boozy effect.
Finally, I top my vegan coconut rum cocktail off with a generous swirl of coconut whipped cream, some toasted coconut chips and a healthy dash of cinnamon for good measure.
Want to make this a vegan coconut mocktail? No worries. It’s basically a coconut-y hot chocolate that’s surprisingly low in calories and sugar, so without the booze, you could sip all night long.

Vegan Coconut Rum Cocktail
Ingredients
- 2 cups almond coconut milk
- 4 tsp unsweetened cocoa powder
- 2 oz spiced rum
- ¼ tsp Cinnamon
- Coconut whipped cream for garnish
- ¼ cup Toasted coconut chips
- Cinnamon for dusting
Instructions
- Place the almond coconut milk, cocoa and cinnamon into a sauce pot over medium low heat and simmer until warm. Stir until well combined.
- Transfer to two mugs, top with whipped cream, coconut chips and cinnamon. Enjoy!

This is just what I was looking for! I changed it up a little by adding cardamom, nutmeg, allspice and tumeric but it was the perfect base for what I wanted!!
