You know Summer is over when people start posting about how excited they are to crush their first PSL of the year. If you’re fortunate enough to not know I’m talking about, you’re a) probably not a millennial or b) have somehow avoided all social media since August of 2014 when Starbucks launched their elusive Pumpkin Spice Latte (affectionately called PSL by fans across the world). PSL isn’t just a drink, it’s a religion to some people, and it’s the SOLE REASON why many even get out of bed after labour day. It’s sweet, it’s spicy, it’s totally festive. It gets us excited about Fall when we otherwise would be crying inside about the end of Summer.

Now the bad news. A typical grande pumpkin spice latte has 350 calories and 50 grams of sugar. That’s just in your coffee drink… That has nothing to do with the pastry you enjoy alongside your morning Joe. I don’t know about you, but that’s just a little too festive to enjoy on the regular. That’s why I created this healthy vegan Pumpkin Spice Latte.

Why This Recipe Works

Key Ingredients

Espresso — You can use a wide variety of coffee beans and roast degrees so use your favourite coffee beans for this pumpkin spice latte.

Pumpkin puree — Be sure to use 100% pure pumpkin puree. Pumpkin pie filling is usually near it at the grocery store and they’re not the same. Pumpkin pie filling is sweetened and seasoned.

Pumpkin pie spice — Pumpkin pie spice is usually made up of a combination of cinnamon, nutmeg, cloves, allspice, and ginger. If you use it often enough, you can just purchase the spice blend for ease.

Unsweetened vanilla almond milk — I love using vanilla almond milk for my pumpkin spice latte. If you prefer different milk, feel free to swap it.

How to Make This Recipe

Step 1: In a mug, mix together the hot espresso with the pumpkin puree, vanilla, pumpkin pie spice, and maple syrup.

Step 2: Steam the milk and add it to the espresso.

Step 3: Top the healthy pumpkin spice latte with pumpkin pie spice and crushed graham crackers, if desired.

Expert Tips

You can also add a little coconut whipped cream if you want to make it more indulgent, but I like a little sprinkle of crushed graham crackers to make it taste like pumpkin pie. It’s your morning coffee, so you do things your way and enjoy!

Make this an iced healthy pumpkin spice latte by adding all ingredients to a jar with a lid, stir to combine, then add ice. Place the lid on and shake vigorously. Shaking the drink with ice will get the drink cold, faster.

How sweet is this healthy pumpkin spice latte recipe?

It is as sweet as you’d like for it to be! You can also control the amount of sugar by adding just enough maple syrup, to taste. I personally don’t even like sweetener in my coffee so I can do without.

How do I make Pumpkin Spice Chai Tea Latte?

Skip the espresso and instead steep 2 chai tea bags in half a cup of hot water for a few minutes. Discard the tea bag and assemble the drink with tea instead of coffee.

Can I use another sweetener?

You sure can. You can try agave, honey (if you’re not vegan), stevia, or another sweetener of your choice.

Ingredients

  • 2 shots espresso
  • 1 1/2 tbsp pumpkin puree
  • 2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • Maple syrup to taste
  • 1 1/2 cups unsweetened vanilla almond milk

Topping:

  • Pumpkin pie spice
  • Crushed graham crackers gluten free and vegan, if desired
