I’m a huge kombucha fan. I love it so much that instead of just drinking it, I love finding creative ways to use it in recipes. Since you guys loved my vegan peach melba kombucha float that I made a few summers back, I thought it would be fun to develop another kombucha themed treat to help you cool down this summer with these real fruit popsicles!

Why This Recipe Works

Hey I love a good ice-cream truck creamsicle as much as the next gal, but when I discovered how easy it was to make my own popsicles at home using real fruit and gut-healthy probiotics, I was pretty stoked.

These kombucha popsicles are designed to meet all of your summer lovin’ needs. You get to pick your favourite kombucha flavour, then pick your favourite fruits and herbs and pop it into popsicles molds to make it your own.

They’re super refreshing and perfect for licking while sunbathing in the backyard with a book. Even Baby E has been caught sucking on one when he was having a bad teething day.

Key Ingredients

Plate of real fruit popsicles.

Kombucha – Kombucha is a fermented tea drink that comes in a ton of flavours. It’s fizzy, subtly sweet, with a slightly acidic undertone. I love it for a lower sugar drink option! You can make it at home or take the much easier route of buying it at the store (like me!).

Fruit and herbs of choice – There’s really no way to go wrong with this. Berries, basil, mango… there are endless combinations to try out. I love making a blueberry basil popsicle with lemony kombucha.

How To Make This Recipe

Step One: Let the kombucha flatten for 5 minutes to just allow the bubbles to subside.

Step Two: Divide up some of the fruit, berries, herbs and flowers between 8 popsicle molds. Cover with the flat kombucha and insert a popsicle stick. Transfer to the freezer until frozen and enjoy!

Expert Tips

If your popsicle mold has a lid, you can try storing the popsicles sideways to freeze. This allows the fruit and herbs to be evenly distributed and not sink to the bottom of the mold.

Recipe FAQs

Can I make these kombucha popsicles without a mold?

Yes definitely! You can make them using a muffin tin, yogurt cups, or even ice cube trays would work.

What other flavor combos do you like?

I personally prefer to use fruit flavoured kombucha for these popsicles to make a sweet treat, but you can of course experiment with different kombucha flavours and combinations. Here are some of my favourite kombucha and fruit combos that you can experiment with:
Strawberry kombucha + strawberries and basil
Ginger kombucha + strawberries and peaches
Strawberry kombucha + strawberries and mango
Peach kombucha + peach and mint
Blueberry kombucha + blueberries and blackberries
